Scones are a quintessential British delight, but they’re not exactly kind to the waistline. This is especially when laden with jam and clotted cream.

If you’re on a health kick, you might be seeking a healthier alternative. Instagram baker @cakeontherun is renowned for her quick, easy, and healthy recipes. She’s shared her ultimate scone recipe, which contains just 175 calories per serving, reports Surrey Live.

Interestingly, the recipe calls for a rather unexpected ingredient – sparkling water. In fact, it works with any fizzy drink, such as lemonade. The recipe is so simple, even those who aren’t baking whizzes can whip up these scones.

They are also Slimming World and Weight Watchers friendly. If you’re vegan or gluten-free, you can easily modify the recipe by using soya yoghurt and gluten-free flour, both of which are readily available in supermarkets.

Simple scone recipe (makes 3 large scones):

Ingredients

– 150g self raising flour

– Two tbsp (50g) thick vanilla yoghurt, plus extra for brushing

– Seven tbsp flavoured sparking water or lemonade

Method

– Pre-heat the oven on 180C, 350F, gas mark 4.

– Put all of the ingredients into a bowl and stir with a spoon until the mixture becomes a dough consistency.

– Flatten out onto a floured surface and use the rim of a glass to cut out three thick circles.

– Place them on a baking tray and brush with some extra yoghurt.

– Oven bake for 12 minutes.

– Serve warm.

Free from

– Make scones vegan – use dairy free yoghurt such as soya, almond or coconut.

– Make scones gluten free – us gluten free self raising flour

Healthy toppings:

Instead of using shop bought jam and clotted cream, top scones with leftover yoghurt and a homemade warm berry compote.

To make your low sugar jam alternative, simply put a handful of frozen or fresh strawberries or raspberries in a mug with a teaspoon of sweetener, sugar or maple syrup and boil in a pan or microwave until bubbling and mushy.
